October

We were counting down to October 1st like it was a National holiday over here. We decided to make it our own holiday actually, pumpkin day. Everything we eat all day has to be shaped like pumpkins or be made with pumpkin, preferably both. I love starting traditions and we decided that this year we would focus on trying to create some we wanted to continue doing when we have kids. I take the traditions I had growing up really serious and love that it helps me feel connected to my family even if I’m not with them and I love the idea of our kids enjoying them so much they do them when they are in college or married.

October comes with all things awesome: pumpkin flavored everything, pretty Fall colors, warm sweaters, crockpot meals and Halloween. All the trees in our neighborhood have started changing colors a little bit and it makes me excited for our trip up to New England in a couple days. So excited for apple cider donuts, pumpkin patches and pretty hikes. Be prepared for far too many pictures! I also linked some of the recipes we made Saturday below, they are so good!

Pumpkin Pancakes W/ Cinnamon Syrup

No joke, these are the BEST pumpkin pancakes I’ve ever had. I can totally say that since it’s not my recipe and therefore not bragging. The syrup is amazingggg. Instead of doing allspice, I added pumpkin pie spice, nutmeg and cloves. The cookie cutter was a huge disaster because I forgot to spray it with non stick spray and it was too big so the smaller the better!

Pumpkin Peppers

This was a little spicy of a recipe (especially for kids) but you can do the same idea and do a ground beef one (which I’ve done and is better IMO) but Lyle liked this recipe!

Maple Icing Pumpkin Bread

I loved the icing on these but the bread wasn’t as good as other recipes. The one I did last year I think it was off all recipes and way good! I plan on using this icing on all my pumpkin breads though! We considered doing chocolate chips but figured that was just too much going on.

Music to my ears

So most of you know that I lost my phone at Six Flags. Never have I ever lost a phone on a ride…so that’s a first. Along with my hair tie and breaking my sunglasses…whoops. Anyway, I am especially sad because I had a note on my phone with all the songs I was going to download from all the seasons of Vampire Diaries (if only you knew how long it took me to compile that list…). Lyle and I are frequently road tripping and exploring so we love finding good music. Ever since we were dating we have always had our own little “playlist.” Whether they have some secret joke, bring up a memory or what, we love music. Below are some songs you might hear on one of our roadtrips. Not all of them are new but sometimes it’s nice to come back to something.
